It sounds like the audacity preferences file in the Library is getting clobbered, or can't be written properly. It is probably worth searching the library for the audacity settings, deleting them and then starting audacity again. This should give you the default settings, including software playthrough off.
Also, check you haven't got either the preferences file or it's containing folder set to be read-only or otherwise locked off from the account you run audacity from. This might cause both problems by forcing invalid sound devices.
Finally, check the partitions / disks the program and Library are on aren't full, as this could cause all sorts of obscure errors.

I think the problem is with your sound card drivers - either try re-installing or look for updated drivers on the manufacturer's website.

This is a bug in audacity 1.2.2 and previous. The new recording will "wrap" and start overwriting the existing one. Please update to version 1.2.3, from here:
