If I use the AV sockets, how do I specify the source in Audacity -there
is a limited number of choices, none of which seem to relate to the AV

Yes, that should work fine.

The quality will depend mainly on your computer's sound card and the
quality of the turntable. If your computer has both "Line In" and
component audio inputs, both will probably have similar quality.
