If I set up a folder to be watched and the images solved, will the WCS coordinates be added to the FITS header? That would save me a ton of time when I'm doing exoplanet runs with a lot of images that I end up having to solve the next morning.

Unfortunately that will not happen. It will solve and display the coordinates (and an offset for a manual set target). This monitoring action is intended to guide an mount and telescope without position encoders to a celestial position.
But you can batch solve images with the batch menu. This menu will solve selected images very quick and update the header with the WCS or WCS+SIP solution. It is described in the manual:
