I am currently working on controlling a DSLR peltier cooler with a similar setup, but it looks like the TIP120 would fry at the currents required (i am thinking about the TEC12706-12708 which would be between 6A and 9A - what kind of transistors could handle that ? i assume that connecting 2 TIP120 in parallel to split the current between them is a bad idea ;) ?

Yes, you are better going with a power MOSFET (with large heatsink) to handle that sort of load.

Do a search for mosfet 9A and that will lead to type numbers, then another search for that plus circuit and you will probably find what you need. Most will need like 10V applied to the gate to switch, so you could use a TIP120 output to drive the MOSFET.
