I guess we are going to use maven2 site generation with xdoc format for
plugin documentation?
Do we have any examples atm?
If not, I'll continue to follow guidelines on maven site.

No, I don't have any yet, you should be able to find someone in the
maven2 plugins (if you check them out from apache source control).
