Recently I have bought a new PC and I have installed the last version of NP++ (4.9.2). File Association settings seem to work. But when I close the editor and re-open it, all file associations are lost.

What exactly do you mean to say?
Do you have to set the syntax highlighting language everytime you open the same file(s)?
This is because you haven't set the specific file type/extension to use the desired syntax highlighting language. You probably select the desired language from the menu every time.
You could use the session saving option to re-open any files opened when Notepad++ was closed. This will also restore the chosen language. Of course, this will not work as soon as the file was closed before Notepad++ was.
A better approach is to add the specific file type/extension to the list of extensions for the desired language.
Syntax highlighting works fine. What I want is to have NP++ as the default editor for all my text files (php, html, txt, ini, css...).
So I go to the menu options Configure... | Preferences | File Associations. There a list of available and associated extensions appear. But the list of associated extensions is always empty after a restart of the application. Even if I move extensions from the available side to associated exts, they just disappear when I close and re-start the program.

In the example, the .txt is associated to Notepad++. But when I quit the program, the list will be empty again :(

Perhaps your settings are saved to one file, but read from another.
