I think npp should have an option to define the default encoding for existing documents.
Because I have to change the encoding (UTF-8 without BOM for me) everytime I open the documents.

I need same function. Everytime I edit document, ANSI is set, but most of my documents is in Windows-1250 and I must set it manually every time I open existing file. I need default charset/encoding setting for editing existing documents.

just select preferred encoding in Settings / Preferences / New Document.

I have this selected, but this is applicable only for new document (File->New), not for existing documents (File->Open).
