I've searched high and low, and I cannot find a shortcut to insert a date and time stamp into a document! This is THE BEST feature in Microsoft's Notepad, I'd imagine Notepad++ would have it too. Does it? If it does, why isn't it documented anywhere? This is crucial here, people!

If i would have to do so, i would make me familiar with N++ and look in all menus.
Look in TextFX - TextFX Insert - Date+Time short -> Crtl+F5
Look also in Preference - Shortcut mapper - Plugin commands - ID name 203/204
you can define your own shortcut.

Settings, Shortcut Mapper, Plugin Commands
Scroll down to and double click on one of
"I:Date && Time - short format"
"I:Date && Time - long format"
create a shortcut keystroke
Remember to hunt for your keystroke among those already defined by default to delete any conflicts
works with v. 5.6.8, maybe earlier, too
