When you set a style in something like Global Styles -> Default Style
And you tick bold etc, click Apply it bolds the text in the document you have open. Then un-tick bold and Apply the Notepad++ application persists with the bold until you restart.
Does that make sense?
In other words you can bold / italics / underline in a style and it will persist for that session and can't be undone without a restart.
