I'm not sure I understand the problem. If you install via the zip file, or if you check "Don't use %APPDATA%" when using the installer program, there won't be a Notepad++ subdirectory of files in %APPDATA%. In that case, the configuration files will be saved to the Notepad++ installation directory.
Try creating a user-defined language in notepad++ first. Start with the "View > User Define Dialog..." menuitem. That should create a userDefineLang.xml file. --Joel
