Anything from proton versions to startup and exit scripts, proton/dxvk/etc. settings, FSR, reshade, and even options for various tools like game mode, replay-sorcery, game scope, etc. Tons more too. I just set my default proton version to "steam tinker launcher" and then every game launches with a 2-second menu that allows you to easily change any of the settings. If you don't press any buttons it just goes with the defaults and launches the game.

These are same simple scripts... One is used to start/stop/toggle a specific tunnel as a service (init script). The second one is a script called when the tunnel is established or disconnected (up/down script). A pyQt GUI interface is also provided.
