Standard shaders like simple color mapping or a relief shading for digital elevation data already exist, but you can also write your own shader. GLplot is a Mathematics function plotting program based on OpenGL. It can be used to plot functions in 3 dimensions. The results are not as good as Mathematica or Matlab but it gives a good example or OpenGL programming.
