apparently you are using a application that collect data in one day file, so it longer to write/read it as the day pass. but the graph is conform to the data collected. it seems to be launch by a cron, or a periodic trimmer.

if you haven't see any java exceptions on the command line, may be this is due to the memory size of java. You have plenty of datapoint, try to launch kSar with more memory..
java -Xmx: kSar-x.x.x.jar
may be 256, try to run it at 512m or 1g
