Glad you got it working. I am curious though, LiveView is working with Workstation 7 on Windows 7 for you? (So it seems that the problem was that LiveView was already installed and you upgraded from Workstation 6.5.x to 7)?

It looks like there are a couple things potentially going wrong here:
LiveView doesn't seem to be doing some registry queries correctly and something is confused about whether you currently have Server or Workstation installed.
After the failure is the VM still created (vmx exists - possibly listed in VMWare's list, possibly not)? If so, can you start the VM?

I assume that workstation 7 is failing a version check that LiveView is enforcing. Unfortunately I don't have a copy of Workstation 7 as of yet, i'll try to get a hold of a copy ASAP and see how this installation footprint differs.
FYI, i doubt it's a 64 bit issue, i've run LiveView many times on 64bit Vista with Workstation 6.5.x.

I don't have an experience with it, but some of the documentation on their website leads me to believe this product would not be the best choice for forensic purposes:

It appears that LiveView was not able to mount the vmware snapshot, and as such was not able to configure the snapshot image for the VMWare disk driver which is likely why windows blue screens when you attempt to boot.
if you could please re create this error, then email me (or post here if you prefer) the file "MostRecentRun.log" found in the LiveView directory under Program Files...

i assume that you're still experiencing the above reg.exe issues with win2000?
I believe i did run into this or a similar issue when testing with a Vista host. However Server 1.x is not intended to be installed on Vista (not a supported setup by VMWare), and if i recall correctly it took quite a bit of effort to install 1.0.8 (possibly even disabling UAC if i remember right).
