What you are looking is probably the value for ContentTallness in etc/emMain/VcItems/FS.emVcItem.
MinAltVW is the minimum viewed width in pixels of the panel when the alternative content panel is shown (just leave it untouched).

You must install the libx11-dev package. Please see http://eaglemode.sourceforge.net/SystemRequirements.html for additional packages you may need (Ubuntu has the same package names like Debian).

If you have some time, then you could modify the layout directly in the source code. It's at the end of src/emFileMan/emDirEntryPanel.cpp. If you do so, please send me a screenshot of your results... I would like to know your favorite layout.
What do you mean with automatic zoom / double click.. Isn't it what you get with middle-mouse-button-double-click or Alt+Home in Eagle Mode?.

File manager customization is described in http://eaglemode.sourceforge.net/emFileManCustomization.html . But what you want is a customizable layout of the directory entry panels. That's not yet implemented. I always thought it's something for version 2.0.
