Umlauts are encoded in XML like in HTML.
If you put them in like ü into the xml, the file should load again.

Mplex can work with multiple audio streams.
DVDStyler just does not tell it to do so.

Usually you would have a .vob file (Video-OBject) where you have video and one or more audio streams multiplexed together. This is needed to keep video and audio synchronized.
To use another audio track, there is a function "select audio stream" or similar. (dont know how it's called exactly)
Subtitle streams are selected the same way.
I don't think it is possible to play 2...
