\setbeamercolor{block title example}{use=sidebar,fg=sidebar.fg!50!green}
Shouldn't it instead define
\setbeamercolor{block title example}{use={sidebar,example text},fg=sidebar.fg!50!example text.fg}
? This way, a redefined example color would be honored.
