My guess, your fault. Makefie hasn't changed much from 4.7.4 version, and the ebuild for that seems to work OK. I'm sorry I don't know more about ebuild to shed any more light here.

The missing options are most probably due to the fact that Rodent must be installed properly so that functional modules and plugins may load when required. That's weird. Are you using 4.7.4? Thumbnails should be generated for all local files supported by gtk (jpg, png, svg), but thumb nails are not the same thing as previews. Previews are larger sized thumbnails which pop up instead of a tooltip when you move the mouse over the icon. If you have ghostscript installed, you should see previews for pdf and postscript files.
