For the ammo thing, you also need to uncheck the "ammo and equipmebnt limits" game option, under the "Allowed units and equipment" tab.
If it is checked, only units that have an experimental techbase will have access to the experimental ammo.
I will look into the other things.

It looks like you started MegaMek by doubleclicking MegaMek.jar, which results in the java default memory allocation of only 65MB to MegaMek.
Run MegaMek by doubleclicking MegaMek.exe, that way, 256 or 512 MB should get allocated to MegaMek, which will be enough for almost every game, unless you run a battallion vs. battallion game.

the snow tileset has been removed because we now use those graphics for proper snow terrain, see TacOps for the rules for that.
As for the savegame not loading, please post a new bug report for that.
We are working on improving performance of the new UI.
