I am finding more and more uses for n++ and would like the ability to insert bullets, embolden text, etc. Is there a way to do this that i may have overlooked?

Sorry, but Notepad++ was made for editing plain text files. I've recorded macros to put bullets on lines (just asterisks), but what you're asking for is more along the lines of a rich text editor.
I didn't find a lot of open-source rich text editors, and nothing like Notepad++'s tabbed interface. I'm a big fan of for making notes, and Tomboy lets you format your text like that. But it's a different kind of app than Notepad++.
