anyone have any plans for building an auto-responder or "I'm away on
vacation but have received your email and will be back xx/xx/xxxx" plugin?
I didn't see such a plugin listed, and it would be useful since my mail
server (for some odd reason or another) didn't come with procmail. Would it
be better for me to install procmail?
I could almost swear I saw this option somwhere in the configuration, but
when I looked for it, I couldn't find it *shrug*

procmail, vacation, or a wide assortment of other tools would be much better.
Plugins only run when you load web pages from SquirrelMail. That means, if we did write an auto-responder plugin, it wouldn't take effect and mail out messages to people unless you were logged in.
A different plugin might be able to configure 'vacation', 'procmail', or something else to provide an auto-responding-type of message, but the plugin itself wouldn't do the work.
I'd suggest looking into these programs

I just discovered vacation about 30 seconds after I sent the mail. One of
these days I'll learn to search first and ask questions later :P
