It should be pop3proxy.log, and in the source code is set to a value of 1, which is fairly verbose.  I am running in uncompiled mode (wperl pop3proxy.pl) so I can stay up-to-date with released spamassassin.  My pop3proxy.pl also is set to debug level 1 and is quite verbose, but I am also using the log exactly as you are trying to.  I produce a daily report saying, for each rule that is hit, how many hits there were with in mail that scored <2, higher but <5, 5-9, and those above 9 which I delete unread.

I'm sure previous versions of the proxy put more into pop3proxy.log, but this version only puts wether a message is spam or ham, 
 
I'm after a way of doing log file analysis to see what my hit rates are for various rules etc...
