Look at the saxon:character-representation attribute in xsl:output, it is
described in the extensions.html file.

Look in the Saxon docs under Saxon Extensions, xsl:output attributes,
and look for saxon:character-representation.
But first think carefully about why you think you need this: it should
not be necessary (which is why standard XSLT does not make provision
for it). When folk ask for this (though usually the other way round)
it is often because the character encodings are going wrong somewhere
along the line. They need to fix that, not brush it under the carpet
by changing character representation.
