This is a Java question, not a Saxon question, and the answer depends on your Java VM. Check the options on the Java command line. I know you can set the memory allocation size, but I don't know whether this affects the stack size.
 
But let's probe deeper: why do you need so much stack space? Perhaps we can find a way of changing the stylesheet to reduce the amount of stack it needs?
