I use this a lot too, but sshfs has some limitations. In particular, I
need to give someone a login on my machine to share files with them!

Certainly not by default. Also, it probably wouldn't offer any
Unix-type commands so I doubt sshfs would work.

Sure, but sshfs is a bit of a hack. I'm not sure what else there is
though. Something based on WebDAV perhaps? CODA? FTP?
