I'm not quite sure what you mean.  You can use a
PreProcessInterceptor/PostProcessInterceptor as described here:
http://www.jboss.org/file-access/default/members/resteasy/freezone/docs/1.1.GA/userguide/html/Interceptors.html

You can also get access to request/response using:

 ResteasyProviderFactory.getContext(HttpServletRequest.class);
 ResteasyProviderFactory.getContext(HttpServletResponse.class);
