Yes, you are missing something. The dynamictext filter is a subset of the watermark filter.

It looks like the pango markup isn't rendering properly for the web page. I'll have to look into that.

Here is the full set of properties for the pango producer:

You can see that it has "fgcolour" and "bgcolour" properties. For the watermark filter, you would specify "producer.bgcolour=red", etc.
You can also embed pango markup in your text:
