What I did was to string CAT 5e to each room of my house where I thought I might want it.  I use parasitic power for the 1-wire so it only needs 1 of the pairs.  1 pair is used for phone and the other 2 pairs for Ethernet.  I break the cables out in my garage  to a RJ45 patch panel and 66 block for 1 wire and phone.  From the 66 block I cable over to a 1 wire hub.

The other end is broken out to 2 RJ45s and 1 RJ11 in a  a low voltage box.  I am able to have miles of wire running everywhere and still have a very clean professional look.  It might not be a great idea mixing a phone line in the same CAT 5 but it seems to work fine for me.
