To keep the correct capitalization, JabRef wraps acronyms and the first capitalized letter of words with curly braces {}. Unfortunately, also inline math gets wrapped:

$\Omega$ becomes ${O}mega$

It should be either {$\Omega$} or ${\Omega}$. Changing this manually also prevents JabRef (un)wrapping it again on load/save.

BTW: the greek letter is not rendered in the preview pane.

Oppossed to inline math, JabRef does not wrap capital letters inside latex commands such as \emph. For instance, species names have to be written in italics. Therefore I enclosed all species names in my library in \textit{} or \emph{}.

\textit{Escherichia coli} should be changed into \textit{{E}scherichia coli} or can be wrapped manually as {\textit{Escherichia coli}}.
