You might find that ironic considering where I work, but I
don't know much about printing. And all the IrLPT support (old and
new) was done by Dag. The only thing I ever tried is PPP over IrLPT.
You should be able to do such a thing. Basically, you need to
tell your printer server to wait for incomming connections on
/dev/irlpt0. When the client make a connection to the server, the data
should be available on /dev/irlpt0.
If you did configure Linux-IrDA properly, the ircomm and
ircomm-tty modules should be loaded automatically.
If you manage to do this, could you write a page for the Howto
describing the process, and send it to Werner ? We need

There is a chapter about printing in the HOWTO already. And
though some parts of the HOWTO lack first hand experience by myself,
because I don't have all the necessarey hardware, this information
is tested and proven to work by me. Please consider to use CUPS
as the printing system as described in the HOWTO. This should solve
the print server issue easily. But there is also documentation
for lpr systems and more.
