Specifically, what I was looking for was the ability to set the packetsize (linux) or "send buffer size" (windows). This is for checking packet fragmentation across private VPNs and firewalls within the subnets of an organization.

Can explain in more details, how this could work?

I currently can think of a new fetcher (column), which will have this option and send UDP packets out.
Then, in which format it could display the results?
