Have you looked at using gstreamer's appsink? That would hand the jpeg frames to your own app-- or I think you can even do a callback with fakesink to get the frames. I use this technique to use gstreamer to capture and process jpeg frames before handing them to mjpg-streamer. Of course, there is nothing wrong with the way you want to do it either. In my case, I wanted to use other gstreamer elements to overlay text and tee the video off to an avi file.
