After reading some more about MTD, I found the linux/drivers/mtd/maps/ gumstix-flash.c and was able to switch back to the previous method of using two partitions and booting from /boot/uImage. Looking at the svn log, I can't find the point where things changed so that flash gets divided into three chunks and the kernel is separated from the rootfs. I also can't find docs on the wiki about how to flash your own kernel/rootfs using the new flash layout. All the pages I found still talk about booting from /boot/uImage instead of a dedicated flash partition. Hmmm...
