We have a device which we're controlling by 3 GPIO.
1 input (5V)
2 outputs (5V)
With the following setup:
Device (3 GPIO's) > 1 meter cable > Verdex (3 GPIO's)
The device uses 5V I/O, and the verdex uses 3.3V I/O.
Can we use two of the:
to set the Verdex GPIO's to 5V?
One chip for input, and one for output.
So we can communicate to the 5V I/O device, with a cable length of 1

Yes - although it depends on what speed you're going to running at and
how much noise immunity you need.
