I'm trying to log the data on to the MMC card with
cat /dev/ttyS2 > /mnt/mmc/gpsout
(with some other code to call the script at boot and set up the serial port,
etc). Has anyone run across a similar problem?

Are you sure the mount suceeded? If it failed, then the logging step
below will still work, but gpsout will wind up coming from the main
flash, and not the MMC card.
Putting gpsout in a directory would help, then the cat command will
fail if the mount fails, becuase the subdirectory won't exist.
Do you have an XM? If so, you may not have erased all of memory before
flashing your previous image (which can cause the new image to work
for a while but evnetually fail in a manner like what you've
