Try loading the kernel module (smc91x)
this will load the driver, then you will have an eth0 device.
in your /etc/network/interfaces make it read like this:
iface eth0 inet dhcp
pre-up /sbin/modprobe smc91x
post-down /sbin/modprobe -r smc91x

I use the same "sandwitch" (Connex + Etherstix + Waysmall STUART) and it =
works well. But I had the same bug than you at the beginning. As a good=20
beginner, I first renamed the file /etc/init.d/s30pcmcia to=20
/etc/init.d/S30pcmcia, as said in the boot message :
"By default, this gumstix is configured for MMC support.
Unfortunately, this means Compact Flash support has to be
disabled out of the box. To turn off MMC and turn on CF,
edit the file /etc/modules and comment out or delete the MMC
lines; then rename /etc/init.d/s30pcmcia to /etc/init.d/S30pcmcia
I just did it without wondering why. And Etherstix didn't work. I got=20
some bad hours then I decided to rename the file back to s30pcmcia, just =
to see ... and Ehterstix worked.
So I don't know if this is a "normal" behaviour, neither do I know=20
wether it will work or not for you, but that the way it worked for me.=20
I'm just a beginner so I can't tell you more about it, sorry ;).
