Ok great!  What a relief.  Apparently I didn't have echo characters turned on in my minicom settings.  I don't remember having to set that in the past... so that seems strange.  But But everything is working now.  Thanks!

That message from u-boot is normal for a blank NAND device -- it can
usually be fixed by running "saveenv" from the u-boot prompt.

Have you checked the flow control settings in minicom?  Both hardware
and software flow control should be off.
