Mm...  did you see odroid-u2 for your project? It has 1.7Ghz ARM Cortex-A9 Quad Cores, 10/100 Ethernet and 2xUSB for any USB web-cam, and works good with Ubuntu.
I use this board for image capturing and processing purposes.
