This is the root of your issue. Try installing gnome-terminal. Menuconfig is opened in a separate terminal

The path issue in the script was just me having setup my build environment
slightly differently to standard, oops, I've now corrected that.  However
when it gets to the "bitbake -c menuconfig" part of the script I get the
following output, it's probably me doing something daft - but I certainly
can't stop it :S
