Also, it seems to take a long time for dropbear to respond, I'm hoping
this is just dropbear, which I have no experience with..

I think dropbears tries to do a reverse dns lookup for your ip ... which will timeout unless you have :
 - an external ip with proper reverse dns
 - an internal dns server that propertly reverse resolve your interna ips.
 - added your pc ip to the 'hosts' file on the gumstix
