It's something like this:
bitbake gumstix-kernel -c menuconfig

and if you are running Ubuntu, there is an additional tweak you have to make otherwise the window will close immediately before you can use the menu.

you gotta go into the menuconfig before building your kernel.  Enable the
PCMCIA support for network devices in one of the menus.

Also, ad-hoc mode runs really really hot, and for some reason the driver
doesn't allow you to turn on the power management settings like it does in
the other modes.

You probably don't want ad-hoc mode if you are connecting to a WiFi access
point.  Probably want "managed" instead.  And skip the udhcpd instructions
on that page you referenced also.

Your interfaces file would be something like:

auto wlan0
iface wlan0 inet dhcp
        wireless_mode managed
        wireless_essid access_point_name
