A friend who's more knowledgeable than I am had a look at this.
Result: gscan2pdf will recognise gocr and cuneiform
It won't recognise tesseract or ocropus
With gocr and cuneiform, if when scanning you tick the check-box to OCR
after scanning then you get no scan.
If you untick that check-box, then the scan is ok, and you can
subsequently OCR it.
All this is in Arch Linux.

I now have gscan2pdf working with tesseract 3.02. I'll release a new
version as soon as I have time.
Ocropus 0.3 doesn't work with tesseract 3.02, I think, and I haven't
had time to package a newer version of ocropus.
