I'm not sure if this is exactly what you're asking, but I'm pretty sure if you make an sld file with the same name as your shapefile, and a .sld suffic, and place it in the same dir as your shapefile, udig will render it completely. I started a crappy one here: http://docs.codehaus.org/display/GEOS/SLD+Intro you can throw it out (and justin/brent it should probably be ported to geosdoc). But you're an ideal person to write the intro, since you're learning it now, and can let others know what you have trouble with, what helped you to understand.
