Thanks very much Claudia. There's no excuse for not gathering something in the documentation on my part. 
However, I didn't get the following: Since the dublin_core.xml file also needs to be in there, would I leave it empty, i.e., just the outer tags and no fields specified, or would I have to fill it in with all the fields that I have in common with the DC metadata?

Hello,

in order to use the item importer with different metadata schemata, you
got to create
metadata_[YourSchemaName].xml within the item directory for each schema
used.
The file itself got the same content as dublin_core.xml.

So an import directory with an item containing metadata of the schema cc
importDir/item01/contents
importDir/item01/dublin_core.xml
importDir/item01/metadata_cc.xml
importDir/item01/foo1.pdf
importDir/item01/foo2.pdf
...
