I think what you are looking for is not davfs.
I see three solutions that make sense:
1. If you just need a networked filesystem, thats NFS.
2. If you want a networked filesystem that caches
staroffice binaries and libraries after they are
loaded the first time, thats AFS.
IBM/TransArc released something under the GPL,
check out the details on http://www.openafs.org/
3. If you can do with a local filesystem and a special
synchronization process, there is a very efficient
solution out there called RSYNC. It transmits compressed
diffs against existing files.
