Internet access is not the only use for the network: Samba will require it if you want to share the Windows partitions with CoLinux.

You can run CoLinux without X but you will be missing a large number of apps. If you just mean to run compilations, crontabs, network apps, etc. without GUI, go for it.

X without a network link back to the PC does not make much sense. You need to have an X server running under Windows and the only way to have Linux talk to this server is through winpcap/tap-win32. The display is controlled by Windows, Linux only runs the application.
I've tried successfully CygWin/X. xeyes worked like a charm. I guess you can do more ;-)
