I am still running ACL 5.0.1, and apparently the file upload examples (getfile and getfile-got) require ACL 6.0 (because of the :external-format stuff?)
If so, is there a way I can still make these examples work with 5.0.1 in the meantime (I wasn't planning to install 6.0 for several more weeks)...

My bad. I was running an old Allegroserve, and trying to compile the examples.cl from 1.1.38! Doh!
I just installed Allegroserve 1.1.38 on ACL 5.0.1 and file upload does appear to work fine, for binary and presumably text files -- I just uploaded a gif file.
It just give a warning:
Warning: For this version of Lisp, external-format is ignored in get-multipart-sequence
