A few things you can try:
Add more capacitance - a small .1uf betweeen
sensor 5v and ground leads, or another large capacitor at input
of 5v regulator.
Check the voltage at the input and output of the 5v regulator.
Should have a nice 5 volts at output, input should be 6.5v or higher.
Try disconnecting the pull-up resistor on the output of the sensor,
or try a higher value(6-10K).
