The man pages for lpr indicate that the "-P" option specifies the
printer name. That should already be captured by the printing
system. If you want to set the job name, the man pages indicate that
the "-T" option. One can, of course, print jobs in OS X using the
Terminal command line lpr. If you want specific command line options
to be sent from a standard print window, you should be able to do
this in any version of OS X 10.3.x or later using PDF Services.
If you need to tell the CUPS server to retain jobs, you can set that
using the cupsctl command 'cupsctl PreserveJobFiles=Yes'. You can
then reprint the job using the web interface.
