I take it you aren't intentionally doing something to prevent logging to
catalina.out? catalina.out is just a redirected stdout (see catalina.sh).
If there's some problem with logging to catalina.out I suppose you could
just try redirecting the console output yourself: startup.sh >> foo.txt
